Enjoy a seasonal rotating harvest of cultivated and foraged mushrooms that include Lion’s Mane, Oyster, Chestnut, and Pioppino. All grown right here on our farm or foraged locally right here in North Georgia.
A half-pound (8 oz) is the perfect portion for 1 to 2 people as a main dish or a generous side for a family meal.
Preparation Tip: The Dry Sauté
For the best texture and deep, nutty flavor, use the Dry Sauté method.
Place sliced mushrooms in a hot, dry pan (no oil yet) over medium-high heat.
Let them cook for 3–5 minutes until they release their moisture and start to brown. If the mushrooms start to stick to the pan, use a couple Tablespoons of liquid (water, wine or broth) to de-glaze the pan. Once the pan is dry again, add a knob of butter or oil and a pinch of salt to crisp the edges.
Storage for Freshness:
Avoid Plastic! Store in a paper bag on a fridge shelf (not the crisper drawer) to let them breathe. There is no need to wash our cultivated mushrooms, but if you do purchase some of our foraged variety, you may find they have some dirt/forest on them. Use a dry brush to brush them off and if they require a little more, you may quickly run them under water but you want to do this quickly and then cook them right away since water quickens the process of deterioration.
The shelf life of our fresh mushrooms are anywhere between 3-7 days depending on the variety of mushroom you choose.
